Step-by-step brewing

Boil fresh, soft water (rooibos tolerates hot water well, so no need to let it cool). Use 2-3 grams of tea per 200 ml cup at about 95 °C. Cover and steep for 4-5 minutes. Longer steeping will not make it bitter — one of the most pleasant features of rooibos. Excellent plain, or enriched with a little honey or a slice of lemon. If you prefer a really bold cup, steep for 6-8 minutes or use a bit more tea. The blend also re-steeps nicely: the second cup is milder, but still aromatic.
