Óvári white pattypan squash is the traditional Hungarian variety of star squash. Vineless type, meaning compact and not space-hungry. Butter-yellow fruit weighing 1–1.5 kg, with the distinctive star shape. Skin and flesh are whitish, with a pleasant, mild flavour.
Growing
Sow in early May in the garden. Plant spacing 80 cm, row spacing 1 metre.
Pick young, from July. Uses: stuffed pattypan, roasted pattypan, soup, főzelék. The star shape makes a unique, elegant presentation possible.
