Place 2–3 grams (about 1 teaspoon) of loose tea in a 200 ml cup. Pour over freshly boiled water at 95 °C. Steep for 4–5 minutes. Rooibos does not turn bitter, so longer steeping gives a stronger citrus and ginger character. Can be brightened with honey or a slice of lemon. Re-infusable.
