Flavour profile
The rooibos base is sweet-honeyed, earthy and lightly woody — orange peel adds a fresh, bright lift, and ginger a gentle, pleasant tingle. Lemongrass closes with a long, clean finish. The cup is naturally a reddish-amber, which itself is visually appealing in service. Works with milk (rooibos latte) and is sweeter, fuller with honey.

Preparation tips
Hot: 2-3 g leaf per 200 ml at 95 °C (rooibos tolerates boiling water), steep 4-5 minutes. Longer steeping builds body and sweetness — rooibos never becomes tannic. Rooibos latte: simmer 5 g leaf with 100 ml water for 2 minutes, add 150 ml hot milk, warm 1 more minute, strain, sweeten with honey. Cold: cold-brew 8 hours in the fridge for a smooth, fruit-forward drink. Allergen notice: may contain traces of gluten, egg, peanuts, soy, milk, nuts, sesame and sulphites (inform guests as required).
Storage and shelf life
Sealed, it keeps 24 months from production in a dark, dry, cool (max 22 °C) place. After opening, transfer to an airtight metal or glass container and use within 6 months. Rooibos stores well — more stable than green or black tea because it is not fermented in the classical sense.
