Brewing tips
The rooibos base is not sensitive to high temperatures, so you may freely use freshly boiled water at 95-100 degrees Celsius. For one cup (approximately 250 ml), measure out 1 heaped teaspoon of the blend and steep for 5-7 minutes. If you steep it longer it will not turn bitter; at most it will develop a more intense aroma, which is one of the pleasant features of rooibos. You can sweeten it with honey or maple syrup, make it creamier with plant milk, or freshen it with a slice of lemon. For the iced version: brew at double strength, cool, and add to ice with freshly grated ginger. You can also prepare it in a larger amount in advance: a teapot's worth of brew keeps for 1-2 days in the fridge and is equally pleasant as a cold drink.
Storage and care
The essential-oil-rich spices in this blend are sensitive to light, moisture and strong odours. Please store it in an airtight, dark container in a cool, dry place. Do not keep it in direct sunlight, near a stove, and do not place it next to scented products, coffee or spicy foods, as it may absorb their aromas. Rooibos on its own retains freshness for a long time if the packaging is properly sealed, but the aroma of the added spices may fade over time, so it is worth consuming the blend within 6-12 months for the best experience. Rinse the teapot used for brewing with warm water only, without detergent.
