Botany
Lime (Citrus aurantifolia) is a small-fruited citrus species in the Rutaceae family, typical of the Caribbean and Latin American regions. The characteristic fresh, sharp citrus profile of the oil comes from a high limonene and β-pinene content, released from the peel oil glands during pressing. It has a sharper, more vibrant aroma than lemon oil.
Origin and production
The oil is sourced from Mexico, from traditional lime-growing regions. It is produced by cold pressing the peel of ripe fruit. Cold pressing does not subject the volatile components to heat, so the fresh citrus aroma and natural colour compounds are preserved in the final product.
