Ibiza winter squash is a Spanish-origin specialty. Lobed, flattened-round hubbard squash. Weight 2.5–3.5 kg. The flesh is thick, fibrous, juicy — with a distinctive Mediterranean flavour when roasted. Striking appearance also makes it usable as ornamental squash.
Growing
Sow in early May in the garden. Plant spacing 1 metre, row spacing 1.5 metres.
The squash ripens in September–October. Uses: roasted squash, Mediterranean dishes, soup, salad. Spanish and Italian cuisine inspiration.
