Fennel (Romanesco) is a beloved Mediterranean vegetable. We eat the thickened, fleshy white part of the leaf-stalk. Close relative of common fennel, slightly anise-flavoured. Adds a popular base flavour to salads and side dishes, but can also be eaten fresh.

Growing

Sow in April–July. Row spacing 40 cm, plant spacing 50 cm, sowing depth 2 cm.

Italian finocchio salad raw thinly sliced, braised, gratinéed. Classic side for fish.
