Flavour profile

The first sip reveals the characteristic, slightly vegetal freshness of Sencha green tea, balanced by the mellow, sweet undertone of Pai Mu Tan white tea (a gently oxidised tea made from young buds from China's Fujian province). Apple pieces bring fruity sweetness, cinnamon adds a warm spiced frame, and almonds round the experience with a lightly roasted, nutty touch. Step-by-step brewing

Boil fresh, soft water and let it rest for a few minutes until it cools to 65-75 °C. Use 2 grams of tea leaves (roughly one level teaspoon) per 200 ml cup. Cover and steep for 5-8 minutes. White and green teas are sensitive to overly hot water and long steeping — if the first cup tastes bitter, simply shorten the time or slightly lower the water temperature. Sugar or honey can be added, but the tea tastes best clean and natural.

A metal tin or an airtight dark glass jar is the best container — metal blocks light, while glass preserves the delicate aromas of the white tea and cinnamon.
