Brewing tips
For one cup (approximately 250 ml), measure out 1 heaped teaspoon of the blend and pour over with freshly boiled water at 95-100 degrees Celsius. Steep for 4-5 minutes, tasting along the way to find the strength that suits you. If you want a stronger flavour, do not extend the steeping time as black tea can easily turn bitter; instead, add more tea. It is excellent with milk: cow's milk works, and among plant milks oat and almond harmonise particularly well with the cacao character. For sweetening, a little honey, maple syrup or coconut sugar is recommended. It is also interesting as iced tea: brew at double strength, cool, and pour into a glass with ice cubes and fresh mint leaves.
Storage and care
The aromas of this tea are sensitive to light, moisture and strong odours, so please store it in an airtight, dark container in a cool, dry place. Do not keep it in direct sunlight, near a stove or radiator, and avoid shelves containing scented spices, coffee or cleaning products. The volatile compounds of the cacao nibs retain their full character over time if you reseal the packaging carefully after every use. Rinse the teapot used for brewing with warm water only, without detergent, so the aroma of the remaining tea is not affected. Allow the sieve or strainer to dry completely after thorough rinsing.
