Chioggia striped beetroot is the most striking of beetroots. Short-season, with a unique white and burgundy striped root — sliced crosswise, you get a wonderful bullseye pattern. Flavour is sweet, milder than the dark red varieties.
Growing
Sow in April–July. Row spacing 40 cm, plant spacing 15 cm, sowing depth 2 cm.
Raw beetroot salad (the stripes really show), carpaccio, braised side with goat cheese. Perfect for elegant presentation.
