Artichoke is a Mediterranean specialty. Flavourful, 1.5–2 m tall vegetable and medicinal plant. The fleshy, aromatic buds are eaten. The lobed leaves and stem are spiny. Protect the crowns from winter frost by covering.

Sow in March–May. Row and plant spacing 100 cm, sowing depth 2 cm. Space-demanding perennial. Loves deep, nutrient-rich soil.
Boiled with sauce, grilled, Mediterranean appetiser; as medicinal herb supports liver and digestion.
