Botany
Nutmeg (Myristica fragrans) is a tropical evergreen tree in the Myristicaceae family, native to Indonesia and the Maluku Islands. The characteristic warm, spicy-sweet-woody aroma profile is created by a blend of sabinene, α-pinene, β-pinene and myristicin. The oil is obtained from the matured, hard seed of the tree (true nutmeg), as distinct from the red, lacy seed covering known as mace.
Origin and production
The oil is sourced from Indonesia, from the traditional nutmeg-growing regions of the Maluku Islands and Java. It is produced by steam distillation of matured, hard seeds. This method carries the volatile aromatic compounds with water vapour, keeping thermal load limited and preserving the characteristic spicy aroma profile.
