Seitan (wheat protein, gluten) is one of the most widespread and versatile plant-based meat substitutes, consumed in Asia for centuries and increasingly popular in Europe with the spread of vegetarian and vegan cuisine. The basis of seitan is wheat gluten, from which a meat-textured ingredient can be prepared, seasoned with water, soy sauce, spices, and aromas. It is a rich protein source: 100 grams typically contains 20-25 grams of protein.

Preparation and Texture

The base dough of homemade seitan consists of wheat gluten flour and water, which is seasoned and then cooked in broth, baked, or steamed. The cooking time and method determines the final texture: shorter cooking gives a softer consistency, while longer cooking produces a more elastic, meat-like texture. Industrially produced seitan products — sliced, minced, sausage-form varieties — can be used immediately in various recipes. It is an excellent ingredient for stews, goulashes, sandwiches, and grilling.
